Aranya

Aranya, forest in Sanskrit

Named for the canopy itself, and for the forest the trees ripen underneath.

Aranya is named for the forest. Two tiers of silver oak and native rosewood hold 62% shade over these rows, and the fruit ripens in that long cold shadow rather than in open sun.

Slowness is the whole argument. Cherry sugars accumulate at this elevation only because nothing is hurried, and this is the lot where that shows most clearly.

Nothing is added because nothing needs to be. The sweetness at 1400 metres was grown into the bean; it was never stirred in afterward.
